Looking for an easy dinner tonight. Try this easy recipe. Super healthy, loaded with yummy veggies and chicken over a bed of rice.
- 1 chicken breast
- 4 TB soy sauce, divided
- 4 tsp cornstarch, divided
- 1/4 tsp ground ginger
- 1/3 cup of water
- 3 TB olive oil
- 1 large carrot, thinly sliced
- 1 to 2 stalks of celery sliced
- 1/4 cup red onion (thinly sliced)
- 1 zucchini sliced
- 1 small bunch of broccoli, cut into small pieces
- I have also added bell peppers, cauliflower, snap peas, mushrooms
Cut chicken into bite size pieces. Mix together 2 TB soy sauce, 2 tsp cornstarch and ground ginger together in a small bowl. Add chicken and mix until covered.
Mix together remaining soy sauce (2 TB), corn starch (2tsp) and water, set aside. Chop up veggies. Separate onion, carrot and celery from other veggies.
Add 1-2 TBSP oil to sauté pan and turn heat to medium. After 1-2 minutes add chicken mixture. Cook for 3 min and then remove with slotted spoon.
Add 1-2 TBSP of oil to pan. Add carrots, onion and celery. Cook for 3 min.
Add zucchini, broccoli and any other veggies you desire. Cook for 2 min.
Return pan to chicken and add soy sauce mixture and cook until desired thickness. Serve immediately over rice.
Enjoy! We use brown rice for this dish, but you can use white as well. This recipe was given to me by my mother in-law when I got married and my husband loves it.
